I came across this recipe and have been making them almost daily ever since. They are coconut covered date balls-healthy, so delicious and low in calories-a perfect snack or a great holiday party treat. And, they are so simple to make (no baking required).

What you’ll need:
  • Dried dates (about 20)
  • Pecans (or any nut of choice)
  • Dried oats (I used Quaker)
  • Coconut flakes
Assembly:
  • Pit and cut dates into pieces
  • Use your hands to mix and mush together (very technical I know), in a bowl, the dates, crushed nuts and oats (you will have to eyeball it but the idea is to end up with a ball of the mixture much like a ball of doe)
  • Make little balls about the size of a small ping pong balls
  • Roll them in the coconut flakes and serve (or refrigerate until ready to serve)
This recipe makes about 20 coconut covered date balls. Enjoy!
